Photos you take and images you download are stored on your phone locally and can be viewed/edited with your choice of gallery app. Surely not all apps send copies of users’ files to the cloud without the user’s authority?
I set up my phone not to backup my files to my Google Account (not that it means Google hasn’t got means to pry what’s stored on my phone regardless).

This is what I am confused by. Why, when phones come with Google Photos preinstalled and with access to the Play Store providing lots of alternative gallery apps, should Nothing be wasting resources working on a clone of these apps but with a Nothing paint job? Seems to me there are far more important OS improvements or new features that Nothing could be developing rather than remaking apps in a dot matrix-style.
