Assuming that you’re using the inbuilt screen recording tool, Is there any particular reason you wouldn’t use zooms recording tools?
Recording meetings using third party tools/software is a bit of a grey area and illegal in some regions as it could imply you are trying to record the call without notifying the other participants.
I believe there may be some instances where you cannot record either video or audio using the inbuilt screen recorder and this may be the case here.
When starting the recording have you toggled video and audio on? As shown below.
