I like the 3D touch from Apple and I love the home button from iPhone 7 and 8.
The button never moves, but when pressure is applied, the haptic feedback makes you feel like you pressed a button.
There are multiple ways to detect pressure, but I think the simplest one is to detect capacitance increase when a finger is pressed against the screen.
Pressing a finger or thumb against the screen will increase the surface area of contact, increasing the capacitance.
I think it would be amazing to add a pressure sensitive fingerprint unlock. It would feel fast, as user have to press harder to unlock. And it will give the same feeling of pressing a button as iphone 7 and 8 series does.
