I encountered the same issue a month ago and reported it to support and sent them logs - for iOS. They said:
“We received a response from our Technical team and advised that they will ask our R&D team to analyze the issue you encountered as soon as possible, and hopefully, it will be resolved in the next version of the app. The health data can only be synchronized once the app is opened.”
Hoping there is something for this soon, as I have stopped wearing the watch all together
